Award-winning chefs and three Chinese cuisines
An award-winning team of chefs has been handpicked to create an authentic Chinese dining experience,. Chef Guowei Zhou from Shandong province in northern China has wide experience from large hotel chains such as the Shangri-La Hotels, Windsor and Sofitel, and now heads up the kitchen here at Fei. The menu features sharing dishes from three of China's eight cuisines.
Cantonese cuisine is characterised by the celebration of the natural flavours of the ingredients. Focusing on fish and shellfish, gentle steaming is the main cooking method to prepare the food. This is in stark contrast to the vibrant Sichuan cuisine, which is known for its intense flavors with lots of chilli and Sichuan pepper. Zhejiang cuisine meanwhile, from the area south of Shanghai, is characterised by a fondness for rice wine that gives the food a deep, sweet and sour character. Here, too, fish is often found as the produce of choice, and all forms of dumplings feature widely.
As tradition dictates in a Chinese restaurant, cold dishes are served first, followed by soup to transition into the hot dishes that are the highlight of the meal. Guests can also enjoy a set 10-course menu, that is perfectly paired with tea, Shaoxing rice wine and Baijiu, providing a shortcut straight into complex China's food and drink culture.
